Grazie Marco, grazie Salutistagolosa! Mi sono spiegata male: la farina E' fine. Il problema è un altro: la farina che ottengo è integrale, quindi la passo al setaccio fine da 0,5mm. Risultato: la farina è sì fine e tutto quanto, ma contiene ancora piccolissime tracce di crusca che non la fanno apparire bianca come una 00. Non se vi è capitato di vedere una farina tipo 2: ecco, mi esce così. Magari sono io che non ne capisce niente e invece esiste un setaccio ancora più fine del mio... boh? Oppure c'è una tecnica di macinazione particolare... corro a leggere il sito in inglese poi proseguirò con i tentativi.
