Gennarino.org ringrazia tutti gli utenti che hanno dato fiducia al nostro progetto per quasi 20 anni, e che, grazie al grande lavoro fatto da tutto lo Staff (rigorosamente a titolo gratuito), hanno portato il forum a diventare uno dei principali punto di riferimento degli appassionati di cucina del web italiano.
Purtroppo, causa motivi personali, non ho più modo di gestirlo e portarlo avanti. Il forum viene ora posto in uno stato di sola lettura: un archivio storico che permetta a chiunque di fruire di tutte le discussioni trattate.

La cottura è andata abbastanza bene. Ma devo fare un po' di pratica nel far venire la pizza più tonda e ci ho messo anche troppo pomodoro.
Per quanto riguarda il preriscaldamento piastra:
(piastra al centro del forno: 3° ripiano dal basso )
40 minuti forno ventilato 250°C + 10 minuti grill al massimo
Cottura della pizza:
(piastra un po' più in alto: 4° ripiano dal basso)
3 minuti forno statico + 4 minuti grill al massimo

Il risultato è stato il seguente:

La refrattaria (ma va meglio una piastrella in gres) va sistemata molto vicina al grill, max 10cm., in questa posizione simuliamo il forno a legna, riduciamo il forno concentrando il calore ed il grill riproduce il forte calore dall'alto della volta del forno a legna. La pizza cuoce in meno di 3 minuti (quei 5 o 6 minuti indicati sulla ricetta non sono stati scritti da me), e, se abbiamo fatto tutto per bene, l'effetto finale sarà con il cornicione a macchia di leopardo e non uniforme come il pane
