Purtroppo, causa motivi personali, non ho più modo di gestirlo e portarlo avanti. Il forum viene ora posto in uno stato di sola lettura: un archivio storico che permetta a chiunque di fruire di tutte le discussioni trattate.

Per questo dolce ho preso spunto da due riviste,"a tavola e cucina moderna" ho fatto un mix, personalizzandole

Rotolo meringato al pistacchio

Vi metto direttamente la ricetta modificata da me

Preparare un impasto da meringa, con 5 albumi , 280gr. di zucchero un pizzico di sale,un cucchiaio raso di maizena e un cucchiaino di succo di limone.



La meringa, ben soda, si stende in una teglia rettangolare foderata con carta forno in modo uniforme,



splverare di pistacchio tritato la superfice di meringa,prima di passarla in forno



in forno a 160° per 20m. circa..Lasciare riposare 5 minuti e capovolgere il rettangolo su un foglio di carta forno preventivamente spolverata di zucchero a velo ; staccare con delicatezza la carta dalla meringa; Lasciar raffreddare, spalmare il ripieno di crema di mascarpone e pistacchio.



arrotolare delicatamente aiutandoci con la carta forno.Avvolgere il rotolo e chiudere a caramella






lasciare riposare in frezeer per 12 ore Trasferire su un piatto da portata, spolverare con zucchero a velo e pistacchio tritato.





Per la crema:
un panetto di pasta di pistaccio
350 gr. di mascarpone
un cucchiaio di liquore gianduiotto
