Purtroppo, causa motivi personali, non ho più modo di gestirlo e portarlo avanti. Il forum viene ora posto in uno stato di sola lettura: un archivio storico che permetta a chiunque di fruire di tutte le discussioni trattate.

Qualche giorno fa ho ripreso con i rinfreschi del lievito madre, avevo conservato delle croste di LM, le ho sciolte con dell'acqua ho fatto un impastino con della farina di forza,aggiunto un cucchiaino di miele, e ho proceduto cosi ogni giorno fino ad avere un LM pronto per essere utilizzato.
Ho seguito orientativamente la ricetta delle ciriole del sito.

ore 18.00
Lievito madre gr.175
acqua 150
farina di forza 200 gr. circa
un cucchiaino di malto
ho impastato con il ken lasciato riposare qualche , poi ho aggiunto altri 200 gr. di farina
un cucchiaio di malto
due cucchiai di olio evo,mentre lavorava ho aggiunto un un'altro pò di farina fino ad avere una giusta consistenza,lavorato con il ken per un quarto d'ora circa, lasciato riposare fino a mezzanotte e mezza, formato i panini, e lasciati lievitare tutta la notte in veranda al fresco, stamani li ho messi in forno con una pentola piena di acqua calda per accellerare la lievitazione,ho fatto i tagli e ho infornato alle 10 per 20 m. a 250°
