io ho modificato le dosi, omettendo gli albumi a favore di 250 gr di panna fresca montata e dimezzato di netto le dosi della gelatina
Ingredienti: 400 gr. di fragole mature o surgelate, 150 gr. di zucchero, 3 tuorli, 3 albumi montati a neve, 1 cucchiaio di succo di limone, 1 bustina di vanillina, 4 fogli di gelatina per dolci (20gr.). Per guarnire: fragoline di bosco e foglioline di menta.
Preparazione: Mettere i fogli di gelatina ad ammollare in acqua fredda. Frullare le fragole Mettere zucchero tuorli e succo di limone in una pentola su fuoco basso con le fragole frullate e cuocere 5 min. mescolando con una frusta. Unire la gelatina ben strizzata e vanillina e mescolare bene sempre con la frusta Versare il composto in una ciotola e lasciarlo intiepidire. Montare gli albumi a neve. e incorporarli delicatamente alla crema di fragole. Versare il tutto in uno Stampo leggermente unto con olio di semi o di mandorle e riporlo in frigorifero a rassodare per il tempo necessario. Sformare in un piatto da portata, guarnire con fragole e foglioline di merita, e servire.
