Un modo per gustare un piatto proibito per chi è a dieta, senza però avere poi dei sensi di colpa.

Per 1 persona:
100 gr di magatello o girello di vitellone tagliato a fette
albume d'uovo
un terzo di bicchiere di latte
sale
pane grattugiato 30 gr.
olio 3 cucchiaini

Mettere in un recipiente l'albume il sale ed il latte e far riposare la carne per almeno 30 minuti nel liquido. Il latte renderà la carne molto tenera e non la farà seccare durante la cottura.
Trascorso il tempo necessario, io lascio anche tutta la notte in ammollo. Impanare le fettine e stenderle su una placca da forno foderata con la carta apposita. Spruzzare su entrambe le parti i 3 cucchiaini d'olio circa 18 spruzzi o se non si possiede lo spruzza olio, distribuire l'olio con attenzione su tutta la superficie delle fettine.
Infornare a 200°, rigirando le fettine dopo qualche minuto. Sono pronte quando si sono ben dorate in superficie (come nella foto). Vi assicuro che il gusto è molto simile alle fettine panate tradizionali ma sono molto più leggere. Se si vuole, si possono arricchire, distribuendo sopra un cucchiaio di funghi trifolati o meglio di porcini saltati in padella.

NB: Considerare la quantità di pane grattugiato utilizzata da togliere dalla razione di pane o pasta. Ovviamente la quantitò di latte utilizzata sarà minima dato che ne resterà molto poca sulla fettina, una volta sgocciolata.
