mousse di nocciole

salve,

ho provato ad adattare la classica ricetta delle mousse per farla alla nocciola:

250 ml panna fresca
4 uova
100g zucchero a velo
100g nocciole

sbatto i tuorli con lo zucchero,
aggiungo la panna montata
trito le nocciole e le aggiungo
aggiungo gli albumi montati a neve.
lo piazzo qualche ora nel frigo.

il risultato è decente, solamente troppo liquida, anche dopo averla tenuta ore nel frigo a 4°

come posso renderla più densa e consistente?

Anch'io sono d'accordo con la colla di pesce per renderla un pò più solida, solo occhio alla quantità che poi in frigo non diventi un mattone!

anche io quoto la colla di pesce...il fatto è che per la mousse al cioccolato findente non serve mentre per tutte le altre mousse è necessaria (Montersino docet!)
