Questi sono dei dolci napoletani, particolarmente duri e speziati. Grazie alal loro consistenza, non si spappolano con il tempo e regalano alla confettura un tocco molto gradevole.

Ho commesso l'errore di fotografare la confettura di albicocche l'altro giorno e a Marina è venuta voglia di provarla con una frutta di stagione e ha provato con i cachi.

Dosi per 1kg di polpa.
1kg di polpa di cachi
400 g di zucchero
2 roccocò (possibilmente fatti in casa)
Succo di un limone.
Per questa confettura ho preferito partire da uno sciroppo di acqua e zucchero.
Con l'acqua e l zucchero ho preparato uno sciroppo,appena lo zucchero si è sciolto e compaiono le prime bolle ho messo la polpa dei cachi unitamente al succo del limone.
Ho continuato la cottura per circa 30 minuti.
Durante gli ultimi 5minuti ho aggiunto i due roccocò tritati grossolanamente.
Li ho messi alla fine per non farli sciogliere del tutto.
Ho messo nei vasi e capovolto fino a raffreddamento.
