Ora ho incrociato e sono curiosa di provarla. Anche se a differenza di quella di Anita ci sono le uova. Comunque, bando alle ciance, ecco la ricetta.

500g di acqua
i semini di una bacca di vaniglia
1 g di buccia di limone grattugiata fine
125 g di zucchero semolato
150 g di tuorlo d’uovo (circa 7 tuorli)
60 g di amido di riso
1 g di sale

Portare a bollore l’acqua con i semini della bacca di vaniglia, la scorza di limone grattugiata fine e la metà dello zucchero presente; nel frattempo fare una pastella con amido, restante zucchero, sale e tuorli, girare fino a formare un composto liscio. Appena l’acqua bolle, unire la pastella all’acqua e cuocere sul fuoco. Versare su una teglia con carta da forno, coprire con pellicola a contatto per non creare la pelle e far raffreddare in frigorifero. Si può conservare 2 giorni in frigorifero.
