]]> 2011-05-06T20:31:16+02:00 2011-05-06T20:31:16+02:00 https://www.gennarino.org/forum/viewtopic.php?t=14494&p=213934#p213934 <![CDATA[Re: Torta paradiso di Ketty]]> ad ogni modo mia madre ha chiarificato il burro proprio come è spiegato sul libro "Dolci manuale pratico di pasticceria" e in poco tempo la porzione di burro per la torta era pronto...la ricetta del libro prevede 5 gr di miele di acacia..per quanto riguarda il lievito lei è andata ad occhio, lo ha aggiunto alla fine e comunque ne ha messo un cucchiaino da caffè raso....il profumo dell'impasto crudo era inebriante ma lei ci ha aggiunto scorze di limone, non tante, ma il giusto per dare un'aroma gradevole.
Nel libro Giovanni Pina scrive che con queste dosi si ottengono 2 torte del diametro di 20 cm ma mia mamma ne ha sfornata una ( con queste dosi) in uno stampo da 18 cm :-) ...inoltre l'ha cotta a 150° per 40 minuti( nel libro i tempi di cottura sono 170° in forno statico o 150° in forno ventilato per 30 minuti).
il sapore è ottimo...la consistenza è soffice,spugnosa,morbida, si scioglie in bocca ed è anche sabbiosa con la crosticina buonissima sopra...provatela...
