NOCCIOLATO
PREPARAZIONE (A ROVESCIO)
Adagiare uno stampo rotondo (diametro 18 cm, altezza 4 cm) su un foglio di rhodoid, foderare i lati e il fondo con un po' di mousse al cioccolato e disporvi un disco di biscuit sacher. Riempire il centro di mousse alle nocciole, ricoprire di mousse al cioccolato, sovrapporre un disco di croccante alle nocciole. Ultimare con un disco di dacquoise alle nocciole avente un diametro di 16 cm e uno spessore di 1 cm. Lasciare solidificare in frigorifero.

RIFINITURA E PRESENTAZIONE
Rovesciare il dolce, staccare il rhodoid e sforma-re. Glassare con una glassa al cioccolato.
Guarnizione: motivi di cioccolato, stemma della casa, zucchero a velo.

CROCCANTE ALLE NOCCIOLE
INGREDIENTI PER 6 DOLCI CA.
100 gPralinato alle nocciole 40/60
100 gPasta di nocciole
200 gCioccolato di copertura al latte (D.G.F.) fuso a 50°
200 gCrèpe denteile sbriciolate

PROCEDIMENTO
Mescolare gli ingredienti nell'ordine indicato, stendere un sottile strato di impasto tra 2 fogli di silpat, lasciare solidificare in frigorifero. Ritagliare alcuni dischi di 16 cm di diametro.

450 g Impasto per bomba
765 g Panna montata
585 g Cioccolato di copertura (64% - D.G.F.)

PROCEDIMENTO

7,5 FogliGelatina ammollati e strizzati (15 g)
225 gPasta di nocciole
375 gPralinato alle nocciole 60/40
450 gImpasto per bomba
600 gPanna montata

PROCEDIMENTO
Fare bollire la panna, aggiungere la gelatina, poi la pasta di nocciole e il pralinato. Incorporare l'impasto per bomba e la panna montata, utiliz-zare subito.

questo e' lo schema di montaggio



n.d.r.: ho lavorato di ocr per cui la terminologia e’ abbastanza tecnica, il rhodoid e’ un foglio di polietilene per alimenti e la dacquoise e’ un disco di massa giapponese alle nocciole, stesso procedimento del disco per la ricotta e pere. Evidentemente le dosi nelle ricette cambiano ma il concetto di base resta.
