saba - sapa - mosto cotto
è un liquido dolcissimo ricavato facendo evaporare l'acqua dal mosto d'uva, il suo utilizzo è prevalentemente nella elaborazioni di dolci tradizionali come "su pan'e saba" - "papassine" - "tilicas" - "copuletas".

40 litri di mosto bianco, ho filtrato dalle impurità con dei teli di cotone, messo a bollire in un calderone, per aromatizzare ho messo delle mele cotogne, buccia di arancia essicate, chiodi di garofano, semi d'anice
