questa settimana nella collana cucina sarda allegata al quodidiano hanno pubblicato "zuppe e minestre", tra le tante ho preso questa ricetta, presentata dallo chef luigi pomata docente all'istituto etoile di sommamarina, perchè avevo sottomano tutti gli ingredienti.

minestra di muggini
700 g di muggini
150 di fregola sarda
2 bicchieri di passata di pomodoro
2 spicchi di aglio
1 cipolla
basilico-prezzemolo-sale-pepe
olio extravergine di oliva

squamate i muggini, sventrateli, lavateli con cura sotto l'acqua corrente, asciugateli e tagliateli a tranci.
trittate aglio,cipolla,prezzemolo e soffiggeteli in mezzo bicchiere d'olio

aggiungete i tranci di muggine e rosolate per qualche minuto a fuoco vivace.

abbassate la fiamma e completate la cottura del pesce,

quindi toglietelo dal tegame e tenetelo al caldo.

unite al fondo di cottura la passata di pomodoro, salate, pepate e aromatizzate con le foglie di basilico(ho lasciato anche le teste), cuocete per altri dieci minuti, quindi aggiungete qualche mestolo di acqua calda

portate ad ebollizione e cuocetevi la fregola.

servite la minestra ben calda e se preferite i tranci di muggini , condire con un filo d'olio extravergine di oliva
