Marmellata di albicocche e zenzero

In una giornata grigia, un pò di dolcezze non guastano mai, il profumo che sprigiona la confettura sul fuoco e lo zenzero, hanno fatto da "padroni" nella mia cucina stamane

1kg di albicocche
500g di zucchero
1 rizoma di zenzero grattugiato
qualche goccia di essenza di vaniglia
succo di un limone

Lavare e asciugare le albicocche, tagliarle a metà, metterle in una casseruola con lo zucchero e il succo di limone, lasciare riposare per circa 2 ore. Mettere sul fuoco, aggiungere lo zenzero fresco grattugiato, le gocce d’essenza di vaniglia, un pizzichino di sale, portare a cottura come di consueto.(prova piattino).
