CARCIOFI ALLA VILLANELLA

CARCIOFI ALLA VILLANELLA

8 carciofi scoccati e tolte le estremità
1 spicchio d'aglio per carciofo
prezzemolo
un cucchiaio di olio evo a carciofo
100gr. di cacio cavallo diviso per 8 carciofi
sale
pepe
per 3 persone

Scoccare i carciofi dalle foglie esterne, tagliare la parte superiore, aprirli un pò eliminando la barbetta interna qual'ora ce ne fosse. Durante questa operazione mettere i carciofi in acqua e limone per evitare che anneriscano
In seguito scolarli,riempirli di aglio ,pezzetti di formaggio e prezzemolo,aprendo leggermente le foglie, adagiarli nel tegame,aggiungere qualche bicchiere di acqua fino a coprire leggermente il cuore dei carciofi,aggiungere il sale e il pepe.
fare cuocere a fiamma bassa per circa 20/25 m. servire caldi,aggiungendo l'olio a crudo su ogni carciofo.
