Ciao,
Alcuni amici di ritorno dal Gargano, mi hanno regalato un bel pacco di pomodori secchi.

Ora, come trattarli per metterli sott'olio? Tempo fa un'amica Sicula mi disse di farli rinvenire in acqua in ebollizione leggermente salata per 3 minuti, farli asciugare e invasettare con olio EVO. Il procedimento è corretto?
Serve la sterilizzazione? Per quanto si conservano? (potrei anche conservare in frigorifero)

E per il patè di pomodori secchi come mi comporto?

Io li conservo secchi in un barattolo sottovuoto in frigorifero.. ne flullo spesso una buona quantità con aglio secco e origano e con questo trito.. aromatizzo dei piatti.. oppure lo aggiungo agli impasti.. panini, grissini, cackers.. vengono veramente speciali
