Ripieno:
1 kg di ricotta romana
3 o 4 hg di mascarpone, sale; mescolare.
Aggiungere erbette miste a spinaci, bolliti, scolati, strizzati e passati al mixer (la quantità è a piacere, deve venire un impasto bello verde)
4 uova, noce moscata, parmigiano abbondante e amalgamare il tutto.
Pasta: 1 kg di farina, 9 uova (se la pasta è troppo dura, aggiungere il decimo uovo). Niente sale. Le sfoglie devono essere sottilissime (ultima tacca della macchinetta)
Con queste dosi sono venuti 356 malfatti
Per un bel piatto la dose è di 20 malfatti a testa.
