Nel senso che mi hanno chiesto di farla... Un siciliano che fa la cassoeula 8O 8O ! Speriamo bene!
Comincio stasera a farla per sgrassare il tutto, cioè le carni: cotenna, zampetto, costine, verzini e luganega...

Consigli? Anche se l'ho già fatta tante volte e mi viene benino :grin: chissà che qualcuno non mi dia qualche suggerimento carino... Ah ovviamente accompagnata da polenta.

Ingredienti

6 verzini
1 kg di maialino in pezzi (2 mesi :cry: ...) era divino da quanto tenero
cotenne di maiale (io non le ho messe per ovvi motivi..)
verza 1,5 kg
cipolla, aglio, carota, sedano
brodo di carne (io avevo quello di gallina con un cucchino di concentrato di carne)
burro (un bel pezzo, diciamo 120 gr)
sale e pepe

Esecuzione

tagliare le verdure da soffritto (aglio, cipolla, carota, sedano) e farle rosolare nel burro;
una volta ben appassite, aggiungere il maiale in pezzi, tranne i verzini;
far insaporire bene la carne ed andare ad aggiungere la verza affettata;
a parte riscaldare il brodo di carne ed aggiungerlo agli altri ingredienti nel
tegame;
salare e pepare e coprire il tutto;
far cuocere a fiamma bassissima per 2 ore, andando a mescolare di tanto in tanto;
dopodiché aggiungere i verzini e lasciar cuocere nuovamente coperto per una buona ora e mezza;
scoprire e lasciar asciugare una mezzoretta. :sad:
