Cercando ossessivamente ho scoperto di avere molte piu' ricette stampte di dolci che di pane... mmm
Mi sono preso della farina di castagne bio prodotta dal Consorzio castanicoltori di Granaglione (Bo).

Ne ho gia' mangiato meta' mannaggia...

CASTAGNACCIO

Ingredienti:
180 gr farina di castagne
20 gr cacao amaro
20 gr zucchero di canna
15 gr acqua
200 gr latte
2 cucchiai di zibibbo ammollata nel rum
5 gr baking
un pizzico di sale

Olio extravergine di oliva (toscano), ciuffi di rosmarino fresco

Come procedere:
Setacciare assieme la farina con il cacao e il lievito. Unire lo zucchero e il sale e mescolare bene con una frusta. Unire gradualmente il latte e l'acqua sino ad ottenere una crema molto densa. Incorporare l'uvetta sgocciolata dal liquore.

Ungere uno stampo di 25 cm di diametro con l'olio extravergine di oliva e distribuirvi il composto livellandolo (poco meno di un cm di altezza).

Distribuire a filo l'olio extravergine e guarnire con ciuffi di rosmarino fresco (eventualmente aggiungere anche una manciatina di pinoli)

Cuocere subito a 170° per 35 minuti circa (devono risultare leggermente crepato in corrispondenza dell'olio).
