]]> 2004-11-12T10:02:04+02:00 2004-11-10T11:00:00+02:00 http://www.gennarino.org/forum/viewtopic.php?t=1765&p=11129#p11129 <![CDATA[Biscotti di San Martino]]> Se da qualche parte fu patrono dei cornuti a Palermo - San Martino - fu definito patrono degli ubriaconi che amavano soffermarsi lungamente nelle osterie cittadine dove colossali bevute accompagnavano pantagrueliche scorpacciate di carne di maiale, salsicce, uova sode, broccoli e cardi in pastella. Oggi l’11 novembre è invece il giorno in cui finisce l’estate e tradizione vuole che si mangino i biscotti di San Martino. Si tratta di fragranti biscotti secchi di forma rotondeggiante fatti di farina, lievito, zucchero, sugna e semi d’anice.

Questi vanno mangiati “abbagnati” cioè intrisi nel moscato di Pantelleria o nel vino novello oppure nella versione “Rasco” e cioè inzuppati in una soluzione d’acqua, zucchero e rhum, svuotati leggermente e farciti poi con crema di ricotta, pezzetti di frutta candita e gocce di cioccolato.

Ma la creatività dei nostri pasticceri non si ferma qui. Il biscotto, infatti, in altra versione viene riempito di marmellate o creme e denominato “Spoletta” se in versione oblunga

oppure semplicemente “Ricoperto” quando rotondeggiante viene impreziosito da una glassa di zucchero colorato

o copertura al cioccolato e tempestato di confettini, cioccolatini e minuscoli fiorellini di “martorana”.
