Io li ho utilizzati in questa ricetta tradizionale pugliese e lucana. Dopo averli puliti e lessati, li ho semplicemente fritti e conditi con salsa di vincotto. Eccovi la ricetta.

LAMPASCIONI FRITTI CON SALSA DI VINCOTTO

Ingredienti:

500 gr di lampascioni

100 ml di vincotto originale

30 ml di olio extravergine (per la salsa di vincotto)

prezzemolo, olio evo, sale q.b.

Procedimento:

Pulite i lampascioni eliminando la base e le radici. Lavateli per bene per eliminare la terra e metteteli in ammollo per un paio d’ore per eliminare l’amaro in eccesso. Adesso sbollentate i lampascioni per 25-30 minuti, scolateli e fateli asciugare per bene.

Quando i lampascioni saranno ben asciutti, applicate delle incisioni lateralmente. In una casseruola, fate riscaldare abbondante olio evo e, quando sarà ben caldo, mettete a friggere i lampascioni a testa in giù. Vedrete che si apriranno come delle rose. Fate dorare e poi metteteli ad asciugare su carta assorbente.

Preparate il condimento mescolando il vincotto con l’olio extravergine e un po’ di prezzemolo. Inpiattate a piacimento le rose di lampascioni e condite con la salsa di vincotto.
