E' una tradizione molto locale, peraltro ormai quasi scomparsa per irreperibilità del prodotto. Veniamo al dunque: il mauro è un'alga bruna (sargassum hornschuchii, Agardh) che ha un uso commestibile a Catania e forse, più limitatamente, in altre zone della Sicilia Orientale. Si consuma cruda, accompagnandola con qualche goccia di succo di limone fresco. E' sapore di mare, concentrato. La si trova (trovava?) più frequentemente nei mesi tardo invernali e primaverili. E' una sciccheria a cui il popolino catanese era grandemente affezionato. Generalmente era venduta insieme ai ricci di mare, in banchetti collocati per strada...
Vorrei ora chiedere alla cortesia di Antonella/ragnetto se può dare un'occhiata a questo testo, che si trova nella Biblioteca Centrale di Firenze e che, forse, è anche disponibile on-line. Ci dovrebbero essere informazioni più precise e, segnatamente, quelle sull'alga verde (una specie di mauru, però verde...) che anch'essa era frequantemente consumata a Catania e che ancora si trova a mare, anche se non la si vende più...
