per lo sformatino
400 g di cipolle di Tropea
3 albumi
25 g di burro
25 g di farina
2 dl di latte
sale e pepe

per la brunoise di verdure
due zucchine
due grosse falde di peperone rosso e giallo
olio, sale, pepe
prezzemolo tritato

Ridurre il verde di zucchina e le due falde di peperone in brunoise e infornarle, condite con olio sale e pepe per 20 minuti circa a 200°.
Nel frattempo sbucciare le cipolle, tagliarle a quarti e cuocerle a vapore per 20 minuti.
Preparare con il burro, la farina e il latte una besciamella. Aggiungervi le cipolle ridotte in purea, aggiustare di sale e pepe e cuocere ancora per un paio di minuti.
Aggiungere gli albumi montati a neve con un pizzico di sale.
Versare negli stampini unti con olio.
Ifornare in una teglia bagnomaria a 200° per 40'.
Sfornare e servire nei piatti, circondati dalla brunoise di verdure, con un filo d'olio e una spolverata di prezzemolo tritato.
