"Crespelle alle erbette"
per 12 crespelle di 20 cm di dm.
2 tuorli
50 ml di latte
25 ml di acqua
350 gr. di farina 00
sale
amalgamare bene gli ingredienti setacciando per ultima la farina fino ad ottenere una crema omogenea; nel frattempo scaldare bene, bene la padella dove andare a friggere una per una le crespelle.



per il ripieno
250 gr. di ricotta
1 tuorlo
700 gr. di erbette
noce moscata
grana
far bollire le erbette e 'macinarle' insieme agli altri ingredienti.


prendere le crespelle e spalmare su di ognuna il ripieno ottenuto ed aggiungere una fetta di prosciutto cotto.


preperare un soffritto con olio, aglio, cipolla e cimette tagliuzzate.


una volta ben 'appassito' aggiungere del latte e panna fresca.


'integliare' (teglia imburrata) le crespelle una per una


..e versarvi sopra il condimento appena preparato, terminando con una belle grattuggiata di grana.

Mettere in forno per 15 min. max e 'papparsele'! :P
