e adesso la ricetta:

Sformatini di ricotta al cacao
(Ricetta da “cucina moderna – serie oro – 137 dolci al cioccolato”)

Per 4 persone

Ingredienti:

350 g di ricotta
60 g di zucchero
4 g di gelatina in fogli
Un tuorlo
2 cucchiai di cacao amaro
Un cucchiaio di pinoli
Tre cucchiai di latte

Procedimento:
mettete la gelatina a bagno con un pò d’acqua fredda per 10 minuti. Strizzatela mettetela in un tegamino e scioglietela a fuoco basso con 3 cucchiai di latte. Montate il tuorlo con lo zucchero e unitelo alla ricotta, mescolando bene per ottenere una crema. Incorporate alla crema di ricotta la gelatina sciolta. Dividete la crema in due ciotole: aggiungete in una delle due parti metà cacao e nell’altra i pinoli tritati grossolanamente, amalgamate bene.
Distribuire in 4 stampini monoporzione: sul fondo la ricotta al cacao e sopra quella ai pinoli; coprite gli stampini con carta d’alluminio e lasciate riposare per almeno 3 ore.
Al momento di servirli; sformarteli sul piatto e spolverizzate con il restante cacao…decorate a vostro gusto
