Gli ingredienti sono soltanto:

Petto di anatra
Sale
Spezie (alloro, salvia, rosmarino, timo, ginepro)
Pepe nero macinato

Ripulire il petto da eventuali tendini, grasso e pelle in eccesso. Rimuovere le piume dalla pelle con un blow torch oppure un paio di pinzette.
Mescolare il sale con il pepe e le spezie fresche tritate e disporne uno strato spesso 1 cm in un contenitore di ceramica o vetro. Appoggiare il petto e ricoprire completamente con altro sale. Coprire con la pellicola e lasciare in frigo per 24 ore.
Trascorse le 24 ore, disseppellire il petto e sciacquarlo velocemente con dell'acqua fredda.
Asciugarlo bene ed avvolgerlo in una garza pulita. Dopo averlo legato va appeso in frigo fino ad una perdita di peso del 30%.

Il mio ci ha messo un mese esatto.
