La regina delle torte salate! Ho provato svariate ricette di Flamiche ma questa è quella che mi soddisfa maggiormente...forse per l'abbondanza e la ricchezza di verdura e formaggio e la fragranza della pasta. Posso considerarla uno dei miei comfort food preferiti!Essendo molto ricca, la servo come piatto unico accompagnata ad un'insalata...Ottima anche fredda, si conserva qualche giorno in frigorifero ben coperta e comunque anche congelata e scongelata sembra appena fatta!Anche se si tratta di una torta salata francese, questa ricetta l'ho estratta dal libro "How to bake" di Paul Hollywood!

flamiche 1.jpgPasta frolla:

250 g di farina più extra per spolverare.
Pizzico di sale.
125 g di burro non salato, a cubetti.
2 tuorli d'uovo di media grandezza
50 ml circa di acqua fredda.


Farcia:

25 g di burro non salato
400 g di porri lavati e affettati
4 tuorli d'uovo ( io 2 )
300 ml di panna ( nel libro "double cream" io ho usato 200 ml di creme fraiche )
Un pizzico di noce moscata
Sale e pepe
150 g di Camembert ( io 100 g )

La pasta deve riposare 3 ore in frigo, si prepara come una classica brisée

Per Il ripieno, sciogliere il burro in una padella a fuoco medio-basso. Aggiungete i porri e un po 'di sale e pepe.
Soffriggete per 8-10 minuti fino a quando i porri sono teneri.
Mettete i tuorli d'uovo, panna, noce moscata e un po 'di sale e pepe in una ciotola. Sbattete bene. Tagliate il Camembert longitudinalmente.
Versate il composto di uova sopra i porri e mescolare delicatamente con una forchetta. Posate le strisce di Camembert in cima.
Cuocete in forno per 30-40 minuti a 180°.
