tortino di patate e cipolle alla crema con sgombro all'olio di oliva 1.jpg

2 cipolle bianche
3 patate grosse
200 ml di panna fresca
12 filetti di sgombro sott'olio
scorza di un limone
prezzemolo
timo fresco
2 spicchi di aglio
sale e pepe
olio extra vergine


Portate a ebollizione la panna con sale, pepe, timo e gli spicchi di aglio in camicia.
Con l'aiuto di una mandolina tagliate le patate a fette sottili.
Tagliate le cipolle a julienne e fatele sudare in una padella antiaderente con olio extra.
Imburrate degli stampini, sovrapponete le patate alternandole alle cipolle fino a completare.
Aggiungete la panna e fate cuocere in forno preriscaldato a 180° fino a che la panna non si sarà completamente assorbita.
Si possono servire freddi o caldi.
Capovolgete i tortini, guarnite con lo sgombro, il prezzemolo, la scorza di limone e olio extra vergine.
