Detto questo:
4 patate rosse
100 ml di latte
50 ml panna
burro
scorza di arancia
sale


Sciacquare le patate in acqua corrente, metterle in una pentola con acqua e portare aad ebollizione. Cuocere per 35/40 minuti, a seconda della grandezza.
Intanto mettere in un pentolino il latte, la panna, una noce di burro e la scorza di arancia grattugiata. Portare ad ebollizione ed aggiustare di sale.
una volta cotte le patate, pelarle, schiacciarle e passarle al setaccio. Metterle ancora calde in un tegame, aggiungere poco per volta il composto di latte mescolando fino ad ottenere una purea omogenea.
