Setacciare assieme farina, sale, lievito, cannella. Ridurre il burro in piccoli pezzo e metterlo nella ciotola del mixer. Aggiungere lo zucchero e mescolare finché il composto è omogeneo. Aggiungere l'uovo ed il latte e mescolare. Allocrchè il liquido è ben incorporato, aggiungere le polveri. Mescolare fino ad ottenere un impasto omogeneo. Fare una palla ed avvolgerla nella pellicola alimentare; riporre in frigo almeno un paio d'ore. Preriscaldare il forno a 180°. Stendere la pasta a 2-3 millimetri, ritagliare nelle forme volute con un tagliabiscotti e disporle nelle teglie rivestite di carta forno. Mescolare in una ciotola zucchero di canna e cannella. Spennellare leggermente d'acqua la faccia superiore dei biscotti e passarla nel misto di zucchero e cannella. Infornare dai 15 ai 20 minuti. Lasciar raffreddare perfettamente e riporre in una scatola di latta.
