2 carciofi
1 cucchiaio di pangrattato
1 cucchiaio scarso di pecorino
2 tazzine di vino bianco
un po' di formaggio a pezzetti,quello che si ha in frigo,io ho messo della scamorza
olio,sale,pepe.
Pulire i carciofi e tagliarli a fettine e poi a pezzetti piccoli piccoli (ho evitato di frullarli a crema.mi piacciono di più a pezzetti).In una padella soffriggere l'aglio in un giro d'oio e unire i carciofi,coprire e lascaire cuocere.Intanto tagliare sempre a pezzetti piccoli i tentacoli e unirli ai carciofi quasi cotti,aggiungere 1 tazzina di vino,sfumare e portare a cottura.ci vorranno circa 5'.A fuoco spento sempre nella stessa padella ( vado a risparmio di utensili) unire il pecorino e il formaggio a pezzetti,aggiustare di sale e pepe e unire un cucchiaio di pangrattato.mischiare tutto per bene.Con la farcia ottenuta riempire i calamari e chiuderli con uno stecchino.Scaldare l'olio e l'aglio in una padella e unire i calamari,rosolarli bene e aggiungere il vino,sfumare,coprire e cuocere per il tempo necessario. Ah una volta riempito e chiuso il calamaro bucatelo un po' con uno stecchino,così non scoppia.
