Ingredienti

Pate a bombe
50g acqua
180g zucchero
100g tuorlo

500 g di panna fresca da montare

150g cioccolato fondente

pasta biscotto
150 g uova intere (tre uova se piccole)
75g zucchero
60g farina

granella di nocciole

panna fresca per la decorazione

Procedimento
Versare a filo sui tuorli che montano lo sciroppo di zucchero e acqua portato a 120°C.
Aggiungere alla montata di uova e zucchero il cioccolato fuso a bagnomaria.
Incorporare con movimenti dal basso verso l'alto la panna montata in modo da ottenere un composto spumoso.


Versare il composto in uno stampo( io ho utilizzato uno stampo da plum cake), applicare un strato sottile di pasta biscotto sulla superficie e spennellare con una bagna al rum.

Sformare a congelamento avvenuto capovolgendo su un piatto di portata, decorare le pareti con la granellla di nocciole e il tetto con panna montata.
