Cappuccino di zucchine

ingredienti:

Per la spuma di buccia di zucchina:

120g. di buccia di zucchina cotta a vapore.
30g. di burro
50g. di acqua di cottura delle zucchine.
sale.

per la crema di bianco di zucchina:

circa 10 piccole zucchine senza buccia,
acqua di cottura delle zucchine q.b.
sale.

per decorare:un pizzico di ricotta salata o pecorino romano o fiore sardo, o quello che più vi aggrada.
accessori: sifone (io ho quello da 0,25 L) con una carica.

prendiamo il verde delle zucchine, il burro, l'acqua e il sale e frulliamoli fino ad ottenere un composto fluido senza alcun grumo.
Mettiamo nel sifone, carichiamo (puntare... fuoco! uahhuhahua)

frulliamo ora il bianco delle zucchine con l'acqua di cottura fino ad ottenere un composto cremoso.

montaggio:

In un bicchierino trasparente versiamo la crema di bianco di zucchina fino ad un centimetro dal bordo. Poi inseriamo quella verde direttamente con il sifone,
oppure con un cucchiaino.
L'uso del sifone può essere sostituito facendo rimanere cremoso il composto verde, diminuendo magari il quantitativo di acqua, magari togliendo anche il burro facendolo divenire un antipasto vegan. E' essenziale reperire delle ottime zucchine, dato che rappresentano la quasi totalità degli ingredienti.
