• 150 gr di riso
• 90 gr di burro
• 50 gr di lardo
• 1 cipolla
• 4 uova
• 3 cucchiai d'olio
• 1 spicchio d'aglio
• 50 gr di grana grattugiato
• 1 cucchiaino di Saporita (spezie miste)
• brodo
• sale

Preparazione
Sofrriggere in burro e olio la cipolla tritata col battuto di lardo e aglio e far rosolare per qualche minuto.
Aggiungere gli spinaci tritati (crudi), salare e cuocere coperto.
Quando saranno quasi appassiti aggiungere il riso e portarlo a metà cottura, bagnando quando occorre con un mestolo di brodo caldo (occorreranno circa una decina di minuti).
Togliere la preparazione dal fuoco (dovrà sembrare un risotto molto morbido) e farla raffreddare. Incorporare uova, formaggio e spezie, salare e mescolare bene. Versare il composto in una tortiera unta e cosparsa di pangrattato, spolverizzare con altro grana e aggiungere qualche fiocchetto di burro.
Infornare a 180C per un'ora.
Si serve tiepida o fredda.

Il composto dovrà essere "molle" perchè il riso, ultimando la cottura in forno, assorbirà tutto il liquido.
