SPUMINI ALLE MANDORLE

Ingredienti: 3 albumi - 300 g di zucchero - 300 g di mandorle sbucciate e tritate (farina di mandorle) un pizzico di sale.


Preparazione: Sbattere gli albumi con il pizzico di sale fino a formare una leggera schiuma.
Cominciare a montare con lo sbattitore elettrico aggiungendo lo zucchero, montare a neve.
Quando si è ottenuto un composto ben sodo, unire le mandorle e amalgamare delicatamente.
Imburrare e infarinare una teglia deporre il composto a piccole cucchiaiate e infornare a bassa temperatura per venti minuti.
Si può utilizzate anche una teglia da muffins o meglio ancora dei pirottini in carta.

Una volta sfornati, chi lo desidera può ricoprire gli spumoni con cioccolato fuso.

Si prestano ad essere serviti con altri pasticcini.
