Ho fatto un primo rinfresco la sera prima di andare a letto. La mattina seguente ho rinfrescato nuovamente:
100 farina (rieper blu)
100 lievito dal precedente rinfresco
125 acqua

Ho lasciato che maturasse (circa tre ore), poi ho fatto l'impasto vero e proprio:
325 lievito maturo
256 farina
100 semola di grano duro
144 acqua

Ho combinato tutti gli ingredienti, e lasciato in autolisi per mezz'ora. Dopo mezz'ora ho aggiunto il sale (8g), e ho impastato ben bene (una ventina di minuti a mano).

Ho messo a lievitare per 2 ore e mezza, con due folding a distanza di 50 minuti.
Ho formato a pagnotta tonda, messa in un colino foderato da uno strofinaccio superinfarinato, coperto con la plastica e lasciato lievitare per un paio d'ore. Trascorso questo tempo ho rovesciato, inciso e infornato alla temperatura massima con vapore (bicchiere scarso d'acqua lanciato sul fondo del forno), abbassando a 200 dopo 10 minuti, poi mi pare in tutto abbia cotto quaranta minuti.

Volendo fare il ritardo in frigo, si puo' fare il primo rinfresco la mattina, poi quello "vero", e tutto il resto del procedimento, con la differenza che dopo la formatura si mette il banneton casereccio (o quello vero se ce l'avete) in frigo fino al mattino successivo, e poi via in forno.
