Risotto con cavolo romano e pane croccante
per 4 persone

320 g di riso
una cipolla
mezzo gambo di sedano
2 broccoli romani
brodo di carne
burro
olio
vino bianco
burro e parmigiano per la mantecatura
prezzemolo tritato

2 manciate di pane secco senza crosta tritato grossolanamente
alici sottolio
peperoncino
olio

Preparare un trito con la cipolla, il sedano, il gambo dei broccoli e lasciarlo appassire dolcemente in burro e olio. Nel frattempo far sbollentare le cimette dei broccoli nel brodo. Aggiungere il riso al soffritto e farlo tostare, sfumare con il vino biano, aggiungere anche le cimette ed iniziare a tirare il riso.

Mentre il riso cuoce, mettere pochissimo olio in una pentola antiaderente, aggiungere le alici con il loro olio, farle sciogliere su fiamma bassissima, poi aggiungere il pane ed il peperoncino e farlo tostare a fiamma vivace fino a renderlo molto croccante.

Portare il riso quasi a fine cottura, spegnere la fiamma, aggiungere burro e parmigiano e lasciare mantecare per un paio di minuti incoperchiando.

Disporre il riso nei piatti, spolverare di prezzemolo e di pane croccante.


La foto è stata scattata con il cellulare, ne metterò una di qualità migliore non appena avrò occasione di preparare questo risotto.
