PASTA con Zucchine, Zafferano e Bottarga.

Ingredienti per 2 persone:
160/180 g di pasta corta (mezze penne o pippette)
1 zucchina chiara grandetta
1bustina di zafferano (qua in Sardegna se ne produce tantissimo!)
1/2 cipolla bianca (se avete il porro va bene anzi meglio!!)
olio EVO
bottarga (di muggine) gratuggiata.

Preparazione:
In una padella bella ampia (io uso il wok), fate rosolare in due cucchiai di olio EVO la cipolla tagliata finemente, appena inizia ad appassire aggiungete la zucchina tagliata a cubetti e fate andare, aggiustate con un po' di sale e ultimante la cottura.
A questo punto mettete su la pentola con l'acqua che verrà salata appena inizierà a bollire per cuocere la pasta (il tempo di far bollire l'acqua e cuocere la pasta coincide con la cottura delle zucchine).
Una volta cotta la pasta (io la preferisco un po' al dente) scolatela e versatela nella padella assieme alle zucchine, aggiungete lo zafferano e fate saltare per qualche secondo.
Ipiattate e spolverate con la bottarga.

Questo è un piatto veloce che faccio abbastanza spesso...
