50 gr gamberoni
10 gr olio EVO
pepe bianco
pepe rosa
½ decilitro succo limone
5 gr aceto balsamico

Fare un'emulsione con l'olio, limone, sale e poco pepe bianco, tagliare in due i gamberi - togliendo l' intestino - e farli marinare al fresco in un piatto fondo con l'emulsione per un paio di ore.
Al momento di servire, sgocciolare i gamberi sistemandoli in un piatto e spolverizzare di pepe rosa pestato al momento. Aggiungere un filo di olio extravergine di oliva - possibilmente ligure o toscano - e un paio di cucchiaini di aceto balsamico tradizionale.
