"L’integratore di pectina è la mela acerba (bucce e torsoli in primo luogo); il correttore di acidità è il limone (tutto).
Io uso questo sistema: faccio cuocere a fuoco basso e con poca acqua, per 30-40 minuti, in una pentola separata, quel che mi serve (mele e/o limoni); faccio raffreddare e passo al colino a maglia fitta. Ottengo una purea molto molle che è un concentrato della sostanza che mi serve; lo aggiungo al succo di frutta e allo zucchero prima della cottura finale. "
