Cena semplice.

accompagnato da un purè di mele

e da carciofi cotti a vapore e ripieni di una salsa di cioccolato extrafondente aromatizzato con cardamomo, coriandolo e mercken (ricordi Teresa?)

Come antipasto una passatina di ceci guarnita con una quenelle di ricotta di pecora e per dessert i biscottini natalizi di cui teresa sa tutto.

Da bere: Franciacorta Saten Ca' del Bosco e Syrah di Miceli

Ecco il maiale dopo tre ore di cottura:

Ha continuato a cuocere per altre tre ore a 120° a forno ventilato e gli ultimi 15 minuti a forno statico a 200°.

Per il purè ho tagliato a tocchi le mele dopo averle sbucciate.

Ho infornato a 120° su teglia rivestita da carta da forno

Queste le mele dopo un tre quarti d'ora, assieme ad un recipiente di sugo di cottura del maiale, con cui ho completato la lavorazione del purè.
