]]> 2007-01-04T16:28:16+02:00 2007-01-04T16:28:16+02:00 http://www.gennarino.org/forum/viewtopic.php?t=8877&p=78045#p78045 <![CDATA[Panettone Gastronomico]]> il panettone gastronomico di Adriano non l'ho mai fatto e non ti saprei dare consigli, ma volevo dirti che per Natale ho preparato un panettone gastronomico con la ricetta di Alberto Baccani (sembra un po' quella delle Simili come impasto) che mi era stata gentilmente suggerita. Se non ho avuto problemi io a farla, puoi immaginarti la facilità della realizzazione... Se ti va di cimentarti, il risultato è assicurato!

Ingredienti:
- farina bianca g 500
- olio d'oliva g 25
- 2 tuorli
- 25 g lievito birra (io ne ho messo mezzo cubetto, ed era già un'esagerazione...)
- un cucchiaio e mezzo di zucchero semolato
- sale.

Impastate la farina con g 250 d'acqua tiepida, il lievito, i tuorli, l'olio e un pizzico di sale. Fate lievitare per 70' poi unite lo zucchero senza aggiungere farina. Lavorate ancora; lasciate lievitare la pasta per 40', quindi ponetela in uno stampo (diametro cm 20) alto cm 12 unto d'olio. Dopo altri 60' di lievitazione, passate in forno a 200° per 35'. Affettate il panettone freddo in 12 dischi del medesimo spessore, farcirli, tagliarli in quattro e ricomporre il panettone.
