Quello che segue e' il , e la procedura che ho seguito e' comoda nel senso che si puo' conciliare con il lavoro fuori casa.
Ho fatto la "pre-biga" con il lievito liquido la mattina intorno alle 8. Il mio lievito impiega circa 10 ore a maturare, quindi verso le sette e mezza di sera ho fatto l'impasto vero e proprio. Dopo un due ore e mezza di lievitazione ho formato in pagnotte tonde che ho messo nei bannetones:

A questo punto ho ritardato il tutto, mettendo in frigo per la notte. LA mattina seguente, dopo circa 12 ore, ho tirato fuori dal frigo:

ho lasciato i pani riprendersi per un'ora circa, poi ho "sformato" dai bannetons (facilissimo dato che li avevo cosparsi generosamente di farina di riso):
