Prosciutto al madera

Preparazione
Mettete le fette di prosciutto su un piatto resistente al calore, posatele sopra una casseruola di acqua in ebollizione e scaldatele al vapore.
Preparate intanto la salsa al Madera: mettete in una casseruolina il sugo di arrosto e deglassatelo con il Madera.
Dopodichè unite un bicchiere di acqua calda nella quale avrete sciolto l'estratto di carne.
Fate sobbollire per qualche minuto, poi aggiungete alla salsa il burro maneggiato con la farina.
Lavorate la salsa con la frusta finché sarà spumosa, poi versatela sul prosciutto caldo e servite subito.

Ingredienti e dosi per 4 persone
4 fette di prosciutto di praga affumicato
1 tazzina di sugo di arrosto
4 cucchiai di vino madera
1 cucchiaino di estratto di carne
1 cucchiaino di farina
20 g di burro
Sale

ma le fette di prosciutto quanto dovrebbero essere spesse? :shock:
