Probabilmente qui in Lombardia quasi ogni famiglia, nei solaio allevava i bachi per poi rivenderli a fabbriche che producevano seta. Sparendo le fabbriche della seta, anche la coltura di gelsi ha avuto un declino, dove prima si contavano a centinaia ed abbellivano i bordi dei viali, ora sono stati sostituiti con altri tipi di piante, per questo diventa difficile trovarli ed è raro che le persone ne conoscano i frutti.
Questo periodo è proprio il momento dove i frutti del gelso arrivano a maturazione, sono gustosi da mangiare freschi e sono gustosissimi per la preparazione di marmellate. Questt’ultime hanno un gusto particolare, potrei dire che ricordano le marmellate di fichi con un retrogusto di mandorla.
