Volevo darvi la ricetta che ho per la baguette con poolish:

Poolish:

Farina forte (Francese T65) 320 gr
Acqua 320 gr
Lievito fresco 2 gr

Impastare e lasciare lievitare per 12-16 ore a 20 gradi

Impasto:

Poolish 642 gr
Farina Forte 680 gr
Acqua (fredda) 310 gr
lievito fresco 20 gr
Sale 20

Impastare con impastatrice a spirale (io ho usato quella a gancio), 4 minuti velocita' bassa, 10 minuti velocita' alta. Il glutine deve essere ben sviluppato. Temperatura finale 24-27 gradi. Fate riposare per 60 minuti.

Scaling/divisione: 4 pezzi da 410 gr / 5 pezzi da 320 gr

Intermediate proof: 20 minuti tenendo coperto

Forma: metter un po' di farina sul tavolo, e poi dare la forma a baguette

Final proof: 90 minuti. Mettere in panni di lino. Dopo 70 minuti fate delle incisioni.

Cottura: iniziare a 240 per poi passare a 220 per 25-30 minuti.
