FOCACCIA DI GRANO SARACENO


Ho fatto la fontana con la farina 250 normale, 50 di grano saraceno, ho sciolto nel mezzo un cucchiaino di lievito disidratato con un po' di acqua e poca farina raccolta e l'ho lasciato lievitare una ventina di minuti. Poi ho aggiunto l'altra acqua, un cucchiaino pieno di sale, un po' d'olio, ho lavorato fino ad ottenere un impasto piuttosto morbido. L'ho fatto lievitare fino al raddoppio.
Poi ho ridotto in crema una fettina di burro e l'ho sbattuto con 2 cucchiai l'olio, spennellato sull'impasto steso in rettangolo.
Gli ho dato dei giri piu' o meno come per la sfoglia:
-fatto il rettangolo, spennellato, chiuso a libro. Ripetuto. Mezz'ora in frigo.
-ho dato altri due giri

Poi il rettangolo l'ho arrotolato e formato un cordone, che ho iniziato allungare facendo "saltare la corda", ho raccolto a chiocciola, steso e messo in una teglia da 30 cm, ho spennellato con poco burro-olio rimasto.
Ho fatto lievitare e infornato col ventilato al massimo per un quarto d'ora.
