Ho acquistato recentemente un libro di Pasticceria dove , fra le altre ricette viene indicata ,nella sezione "cioccolatini vari", quella dei Cuneesi (che io conoscevo diversamente)
le dosi sono quelle professionali...
ricetta:
Meringhetta

albumi 800 gr
zucchero semolato 2000 gr
glucosio 100 gr
cacao 100 gr

sbattere gli albumi con il glucosio leggermente scaldato, poco alla volta aggungere lo zucchero semolato, sino ad ottenere una meringa ben soda.
quindi a mano assimilare il cacao setacciato , formare su carta forno o su carta oleata delle piccole meringhe del diametro di 2- 2,5 cm., schiacciare bene le punte e cuocere in forno a 130° 140° per circa un'ora, schiacciare poi il fondo delle meringhette e completare la cottura

La parte in rosso non la capisco proprio...cosa significa schiacciare..come ...quanto...il fondo? quale fondo? completare la cottura...per quanto tempo?
