Dopo tanti esperimenti una crostata fanatastica... era la mia bestia nera !! :-o
Per la frolla ho utilizzato una ricetta di un sito francese, mentre per la crema ho utilizzato unaricetta dell'Etoile ma quella senza panna.

Ecco la base fatta cuocere in forno a 180° per 20 minuti con i legumi e 20 minuti a 150° senza.

Qualche domanda:

La base della frolla è rimasta leggermente rialzata dal fondo e quando si è raffreddata non si è riabbassata ma si è formata una specie di concavità, potrebbe essere dipeso dal fatto che non ho bucherellato il fondo prima di infornare o dall'eccessivo calore visto che ho poggiato la teglia sulla pietra refrattaria che avevo dimenticato sulla griglia.

Altra domanda quando fate il composto di uova e zucchero per la crema pasticcera da versare poi nel latte, se usate la frusta elettrica montate il composto oppure è sufficiente amalgamarlo senza incorporare aria (tipo frusta K per capirci )
