lessare gli spinaci, e passarli in padella qualche minuto per insaporirli con aglio olio e sale.
frullarli con il parmigiano o pecorino come preferite....aggiungere la ricotta, 3 tuorli e la panna, aggiustare di sale.
a parte montare a neve gli albumi(provate...la farcitura,specie se è un po' "gnucca" come questa, acquisisce una sofficità che non credereste), e li aggiungo al composto di ricotta e spinaci delicatamente per non smontarli troppo.
sulla base della torta metto il prosciutto , ci verso sopra la crema di spinaci e copro con un altro disco di sfoglia.
cottura 35 minuti a 200°
